A crunchy, crispy, savory/sweet snack that will satisfy the *crunch* you might need. Replace those potato chips! Or top a salad with them.
Sometimes, it’s hard to come up with THM E snacks. (Healthy carb, less fats.) I feel like I lean more heavily on S snacks, because it’s easier. (Fruit with some protein usually ends up a Crossover for me, which is perfectly FINE for me. But when you need an E, it’s great to have something different.)
I was chatting with my husband’s aunt the other day, and she mentioned fixing chickpeas. This got my mind churning, so I had to fix them myself.
This is reminiscent of the recipe for Roasted Crispy Garbanzos in the very first Trim Healthy Mama book, but I took my own approach to it. I made two different versions, sweet and savory.
Savory Roasted Chickpeas
Ingredients:
1 can chickpeas (Garbanzo) beans (.99 cents at most stores! Cheaper than chips!!)
Coconut oil spray
Salt
Garlic powder
Paprika
Directions:
Preheat oven to 400 degrees.
Drain and rinse can of chickpeas (also known as Garbanzos). Place on paper towels to dry.
Put chickpeas on a baking sheet, and spray lightly with coconut oil spray.
Sprinkle mineral salt, garlic powder, and paprika all over the chickpeas. Don’t coat too heavily, but make sure they are all covered. Shake the pan and reapply if needed.
Place in the oven, and cook for 25-30 minutes.
Shake the pan once or twice during cooking, to make sure they are all cooked properly.
Great substitute for chips for that crispy crunch you crave!
Sweet Roasted Chickpeas
Ingredients:
1 can chickpeas (Garbanzo) beans
Coconut oil spray
Cinnamon powder mixed with Gentle Sweet, or Pure Stevia Extract Powder. Or erythritol.
