Joy's Gourmet Chard (THM-S)

Chard: a green that isn’t that popular. I was a bit disappointed when my recipe for Easy Sautéed Chard didn’t blow through the roof with comments on how great it was. I’m kidding, because chard is one of those veggies that may not be everyone’s most favorite, including me. BUT! I will eat it because it’s so good for me.


Well, my husband gave my mother a huge bag of chard, because our garden was bursting with it and I was sick of fixing it the same old way.


My mama, Joy, called me one day saying she made the best chard. So I tried it that night, and it really was so much better!


Joy’s Gourmet Chard (Low-Carb, THM-S)


Ingredients:

Bacon grease and olive oil

Chard stalks, chopped

One red onion, chopped

Chard greens, sliced longways about ½ in thick

½ tsp White pepper, ½ tsp red pepper flakes, ½ tsp salt (or to taste)

1 tbsp Apple cider vinegar

1-2 cloves fresh garlic, minced

Splash of Balsamic vinegar


Directions:

Heat bacon grease with about a tbsp olive oil, and add chard stalks and red onion. Cook until they are tender, about five minutes, then add the greens.



Season with the white pepper, red pepper flakes, and salt. Add the dash of apple cider vinegar, and stir around for about 10 minutes to cook.



When it’s almost time to serve, mince the garlic, and add to the top of the greens. Stir it around to flavor it, but don’t let the garlic burn. Right before serving, add the splash of balsamic. Serve it hot.



*THM Notes:

I'm a nursing mama still, so you see I have a big T-bone steak (from our own Jersey cow) and a side of Roasted Sweet Potatoes. This plate is a good healthy Crossover for THM people.

The chard recipe itself is an S, and a great side if you're wanting to incorporate more greens! Give it a try!
