Meet Amanda Moeller, founder of A.M. Baked Goods here in Walland, Tennessee. We have been friends for several years. We actually met through our husbands…who are co-workers! She has always been such a sweet, generous, friend and I am happy to introduce her to you all!
Amanda and her husband and daughter live only a few miles away from our farm. So, we often get our children together to play. (It’s mostly adult time for us!) And since February 2019, Amanda has opened her own low-carb bakery, specializing in scrumptious desserts!
At first, she just wanted enough profits to maybe go out to eat once a week…just to help out with the family income. She had no idea her business would be so successful. Her orders are through the roof, folks!
What is a low-carb dessert anyway? Amanda has tweaked some staple dessert options…like coconut cupcakes and chocolate brownies…and made them “healthy”. She substitutes white flour and white sugar for products like almond or coconut flour, and then subs natural sweeteners, like stevia and erythritol, in for the sugar! They are all low-carb, perfect for those who may be following the keto diet or Trim Healthy Mama (THM).
This is practically a novel idea in our area—a low-carb bakery. She has had great success in her small business in the past few months… so much so that she has orders from the online THM community. One family from out of state will be travelling through our area and requested to meet her for their order! Too cool!
It’s been really great to see people take an interest in her low-carb, health conscious desserts.
She even got a shout-out from THM founder, Pearl Barrett on their podcast. What??! Pearl tried her doughnuts and really loved them! That’s a huge stamp of approval. Well, I’ve been lucky enough to be the taste-tester…and her treats really are wonderful. My husband even snuck one of her cupcakes, trying to hide it from me because it was past bedtime. I said he didn’t have to hide, it was ok…the cupcakes are healthy. He didn’t believe me! (Ok, some of my attempts at healthier desserts haven’t been so successful…) That’s just to say that if you can trick my sugar-loving husband with stevia and erythritol, they gotta be delicious.
I asked Amanda if I could come over and snag a recipe and take some photos. She graciously let me and my three boys crash at her place while I took notes, and she baked some pies.
Strawberries have been my fascination the past few weeks, so this fits in perfectly with my goal of eating seasonally. Tastes great and it’s great for you, too! Here’s her recipe.
Strawberry Pie (Low-Carb, THM-S)
For the crust:
2 c. almond flour
¼ tsp salt
2 tbsp butter
1 egg
Pulse all ingredients in food processor. Press in pie plate. Bake on 350 degrees 12-15 minutes.
While the crust is cooling, prepare the filling.
Strawberry filling:
3 large strawberries (or a handful of smaller ones)
1 c. water
2/3 c. Gentle Sweet, or mix your own erythritol and stevia blend *See note on sweeteners below* (THM affiliate link)
1 tsp glucomannan (a natural thickener)
Blend berries briefly to crush them a bit. Add in the other ingredients. Pour in a pot, and simmer on the stove until the berries are soft.
Add 1 pack (or 2 tbsp) of gelatin. Whisk, and continue to heat until the mixture bubbles.
Let the mixture cool.
To assemble the pie:
Arrange in prepared crust 2-3 c. sliced strawberries.
Pour cooled filling on top and let chill some more. Then, top with whipped cream. (Recipe below.)
Whipped Cream Topping:
1 ½ c heavy cream
3 tbsp sweetener
Whip cream with a mixer until it is thickened.
Amanda piped her whipped cream onto the top of the pie and it was lovely.
We all sat down and had a piece. Thumbs up from the little boys and little girl. That’s always a good sign.

*Note on sweeteners. Amanda has used a combination of erythritol and stevia for her sweetener. These are both natural sweeteners. Stevia is actually an herb, and erythritol is a sugar alcohol. A great option is Anthony’s Natural Erythritol Sweetener.
I also use this stevia powder from Trader Joe’s. (These are affiliate links through Amazon. Order through my links and I could receive a commission!) Stevia and erythritol are both gentle on blood sugar, and great options for replacing plain white sugar. Amanda uses 1 cup of erythritol and ¼ tsp stevia powder as her own sweetening blend. (THM sweetener’s such as Gentle Sweet is comparable, but THM Gentle Sweet includes xylitol.)*
